Lemon coconut yummy!!

For those of you who just love incorporating coconut oil into your daily diet, or for those of you who just want another healthy way to get good stuff into your daily eating, here is an easy and convenient way to do just that!!  These are very simply made, with only four ingredients and no cooking, you’ll be head over heels.  If you make these and try any other flavors, please do share!!

Ingredients:

1 Cup Coconut oil

Zest from 1 lemon

Juice from 2 lemons (use the zested lemon!)

2 Tbsp honey or other sweetener.  (go natural here,  NO ARTIFICIAL stuff!!  I used “Ideal” natural sweetner, but Truvia, or Stevia work too!  Err on the side of less honey because too much will prevent proper freezing.)

Put half your oil into a small blender or food processor, put the other half into your microwave for 10 seconds, just long enough to melt it.  (Or you can warm it in a pan if you don’t want to microwave it, which possibly kills some of the health benefits of it).

Once your oil is melted, combine it, and the zested lemon and lemon juice, and sweetener/honey, blend until smooth, pour into silicon molds (I used silicon ice cube trays) and refrigerate until solid.  (about 1-2 hours.)  Pop them out of the  molds, and store in a baggie or container in the fridge.  Enjoy a few a day, but be mindful these bad boys have a LOT of calories!! One to two tablespooons a day is touted as carrying lots of health benefits.   Let me know if you try these and enjoy them, or what changes you may make!

**Original recipe inspiration from here.  I tweaked hers because it seemed to me to be a little too much lemon juice and too much honey, making them hard to freeze completely.**

  1. I used cocoa, some coffee in mine with some vanilla extract. Great energy booster and it took away my sweet craving. Of course I had to heat it to get it to mix, but it’s great!

  2. Has anyone tried this with tumeric? I’m thinking of adding tumeric and black pepper.

      1. I didn’t add honey I hate honey lol but I did the lemon amd lemon zest it’s my first week and I’m still doing one a day next week I’ll do 2 a day I have noticed more energy and less cravings for junk hope helps me with my weight loss goal quicker thanks for the recipe 😊👍🏻

  3. Okay so I’m a bit late to this party, but as someone who consumes coconut oil everyday, I can’t believe I never thought of this myself. Lol. I made these exactly as you posted and I love them. I drop one in my hot mug of green tea and what a treat! So then…..I made them with blood orange! What an awesome colour and these I just pop in my mouth. It was suggested that I put a bit of almond extract with the orange but I haven’t done it yet.

    1. Awesome! Blood orange sounds good and what a great idea to add to tea!! Wish I could take credit for the original idea but I found it somewhere online and just tweaked the recipe to work better. :). I’ll have to try some of your ideas too! Thanks!!

  4. hi! what can I use instead of coconut oil? maybe I could replace part of it with some other oil or butter? (nut butter?).. Here in Argentina it is too expensive.

    1. Hmmm… Well, you might consider purchasing it on amazon? Its cheaper there, but I unfortunately don’t know off hand of another oil that can directly replace coconut oil. If you find something, please let us know! Otherwise I would try looking for coconut oil on Amazon or ebay. 🙂 Good luck!!

  6. I finally made this today with just a few modifications. Kept oil and zest the same,
    I used juice of 1 lemon, not 2
    I used 1 TBSP honey, not 2
    Added about 1 tsp powdered ginger
    Blended all with immersion blender. Froze them in an old-fashioned ice cube tray, makes 16. Solidified well. I was able to bite cube in half. Tasted only lemon, not the coconut oil. Can’t wait to drop one of these into hot tea!

  7. I tried these twice and they were delicious both times. The first time I made the original recipe. The second time added a bit of orange zest and a tiny dash of ginger powder. It gave it that extra depth. It was great.

  8. I’m so glad I found this; thank you!! I used 1/2 cup of coconut oil, 1 tablespoon of cocoa and 1 Tablespoon of Agave, and put it all in the mixer. When it was all whipped up, I put it in a baggie and piped it onto parchment paper and stuck them in the freezer. Totally just tricked my kids into eating “frosting bites”! 😉

  9. I’m going to try to whip up a batch for my mother who suffers from Alzheimer’s disease. She loves sweets, and I’ve been trying to work healthier foods into her diet. She has always loved lemon, and coconut, so this might be a godsend! Thank you!!!

    1. Be careful how much. My sister in law’s father has the same condition and developed diarrhea from coconut oil. Try small doses at first.

  11. These are wonderful. After reading the comments, I decided to only make 1/2 recipe as not to waste my precious coconut oil. So I’ll be making more really soon. I did make some adjustments based on the comments as some said the lemon juice separated from the oil. I used stevia powder, lemon zest and lemon extract. Put into little molds and they are PERFECT! Wish I could post a pic.

  13. can you use cocoa and make them chocolatey? I put a lot of lemon but still taste the coconut oil, which I don’t really care for (I do oil pulling with coconut oil so it makes me think of that!).

    Also, I left mine in a bag in the freezer and just at them like that. Pretty good cold and they quickly warm up in your mouth.

    1. I’ve not tried chocolate but am sure it would be worth trig! Let us know how it goes!!

  14. I used an orange instead of lemons (it’s what I had). I used my kitchen aide but ended up finishing the whipping with my hand mixer, put it into the plastic bag and piped it onto wax paper, stored it in fridge for about 15 mins. I would not use a whole orange for the juice, it was too much juice that wouldn’t blend…..so I poured out the extra juice. It helped a little.

    1. I bet that was delicious! I may have to try that. I love lime flavor too. I think I did mango lime once it those were my fave. I did notice that too much honey or juice messes up the consistency and freezability, so yes, less juice is better. Let us know any other flavors you try!

  15. Tried it, loved. The only difference I made to the original recipe is I whipped it and used a piping bag to make little discs. Decided to play around with the idea and made vanilla discs for my coffee. 1 cup coconut oil, 1 vanilla bean, 1 tsp vanilla extract, 1 Tbls raw honey. Whip it up, store it in the fridge or freezer, put a disc in your morning cup of Joe!

  16. I had some ginger syrup on hand so used that instead of the honey and also added lemon extract. It is delicious, but I have the same lemon juice separation (I tasted it, pure lemon juice!) that others noted. I am hoping that if I don’t keep it refrigerated, the juice will stay in suspension better. Not sure yet… also, forget the molds, just gonna keep it in a tupperware tub and use a spoon. I think the texture is best at room temp anyway.

    1. Room temp is part of the reason for the separation. I think the honey and syrups are heavy and cause separation. Try stevia. Or a bit less lemon juice. Try again!!

  17. Just made my second batch…amazing!!!! The first batch I added vanilla extract, and this batch I added raspberry extract. So good!!! These totally help my sugar cravings! Exactly what I needed. Thanks!

  19. Whip – whip it real good girls! I put the harden Coconut Oil into a mixing bowl and whipped it up. Once the Coconut Oil is slightly softened and whipped – add your other ingredients. Now when you do that – it will look start to look like a soupy chunky mess. No worries – in time as you keep whipping it – this beautiful fluffy creamy white stuff will appear. All ingredients incorporate nicely. Just be patient and keep whipping. It will turn out like a soft white Meringue or whipped Cream. It’s beautiful. I put it into a decorating bag and piped it onto wax paper making pretty flower shaped drops. I then chilled them. After about ten minutes of chilling – I bagged them up and popped them into the freezer. Wha-la! Wonderful white tasty sweet bites. Delicious! 🙂 Note: If you’re room temperature is to warm and you’re oil has all melted – put the bowl into the refrigerator a few minutes to harden the oil again. Your Coconut Oil works much like butter would in frostings. 🙂

  20. I made these this afternoon (only had 1 lemon so had to sub 4 key limes for the 2nd one), and added 2 packets Stevia. These are awesome! An anti-coconut oil family member even liked them!! I can’t wait to try again with all lemon, or grapefruit! And with raw honey these would make excellent lozenges for sore throats.

    1. Try a few fresh mango chunks and lime zest and juice. It’s marvelous! You need a blender to purĂŠe it but it’s lovely!!

    1. Tons of benefits. Good fats are good for the brain, and metabolism. Coconut oil is anti bacterial among other things and helps balance the body. Google it!! It’ll blow you away. Lemon is a detoxer, immune booster, and alkalizes your body, to start. 🙂

      1. How can lemon juice, an acid, alkalize your body?

      2. It is an acid in your mouth (hence the damage on tooth enamel) but when it hits your stomach acids, it causes a reaction that turns it alkaline. I know, weird.

    2. Tons of benefits. Coconut oil helps balance bacteria in the body, good fats help with metabolism, targeting the burning of stubborn belly fat. Good for the brain. Lots of benefits. Hit Google with it!!

  22. I just bought some coconut oil and this sounds like I might like it espe ially since you can use so many different flavors. My question is does the coconut flavor over power the other flavors. I am trying
    to get coconut into my diet, but I really dislike the flavor of coconut.

    1. Joni- i love how coconut oil has a very subtle flavor. I think flakes are much stronger than the oil. I dont mind coconut flavor but if you use strong flavors like citrus or strawberry or mango, it should be easy to disguise.

    2. Joni, you can buy unflavored coconut oil if you don’t like the flavor of coconut.

  25. This is awesome! Off to try with lime juice and I sweeten with xylitlol. I just tried one with a little full fat coconut milk and it came out really creamy. So I may add that and a little shredded coconut for flavor, texture, and bulk. OOOh can’t wait!

    1. You could use that in addition to the juice but if you just flavor w your oil it might not be a strong enough flavor. Let us know your thoughts!

  29. I am gonna try this today with grapefruit! We love grapefruit and we are very new to coconut oil. Question…..I don’t have a zester…would a box greater work on the small hole side?

    1. I use a regular grater bc I don’t have anything for zesting specifically either.

    2. I have found that the easiest thing to zest with is a microplane. It was so much easier than my actual zester that I gave the zester away. Plus the microplane has many other uses.

  30. I loved the original version, but some people in my family were having issues with the “lardy” texture. So I only put 1/2 cup coconut oil in (not melted), and then put 1/2 yogurt in. (With 1 TBSP honey, and some mango chunks!). They turned out realllllly good! It got rid of the weird texture, but yet the coconut oil caused them not to freeze as rock-hard as just plain yogurt typically goes. The only thing I had a problem with was, when I poured the yogurt on top of the oil in the blender, the oil hardened up into little chunks–it almost seems like I put shredded coconut in it. Maybe I’ll let the yogurt warm up a bit next time…

  34. I’m just about to try this recipe! Wish me luck haha. In regards to the separation, could be because fruit juice is mostly water, and oil/water don’t mix?

    1. How did it work out? Only juice I added was a little lemon, but that is a good point. Two thinks that I think made a diff: too much honey makes a separation, and melting all the oil doesn’t leave any substance while setting to prevent the zest from settling and thus separating. Let us know how yours turned out.

      1. I think it turned out pretty good! I used juice of 2 lemons, and stevia (powder) I’m really not used to the taste of stevia, and the flavor was a bit too sweet for 2Tbs. I might use 1 lemon to 1c coconut oil, a couple drops of lemon stevia and only 1Tsp. of honey. I may even look into trying coconut crystals for sweetener.
        I looooove them though, thank you for sharing!

    1. Yes. I use baking stevia in place or to compensate a lesser amount of honey. Good question!

    1. They do melt, but not gonna lie, texture is still a little weird. Flavoring and sweetening it helped soooo much.

  39. It may already say in the comment thread, but do you know the measurement of the actual oil used per treat? I would like to keep my intake to 2 tablespoons per day, so I’m wondering if eating two would be equivalent or close anyway. Also the coconut oil I use is pressed. Could I use the cup of oil just softened and then blend it?

    1. My molds seem to be close to 1 Tbs each. So two would be sufficient.

  41. I knew I had to try this because I LOVE lemon. I added a few things just for fun: a block of low fat cream cheese & a little lemon and vanilla extract. I sweetened it with 12 drops of liquid stevia, and then remembered that I had some sugar-free coconut syrup. It turned out really well, sorta like cheesecake. Thanks so much for this recipe!!

  43. I’m going to try this and add a bit of coconut milk. I think it will make it a creamy fat bomb. Also, I love the heart shapes you used. Can you tell me where you got them? I have some round ones, but just love the whimsical look of the hearts with the ridges around.

    1. Hi there!! The heart molds I got last spring in dollar section at target. Maybe summer time actually. I usually just keep an eye on that section. 🙂

  44. I made these today with orange instead of lemon and raw sugar that i ground to fine in the food processor before adding the other ingredients. Oh yum!!!

    Also, instead of a silicone mould, I let the batter cool slightly and then put drop on parchment.

    1. No problem! A note, I have found that too much honey will keep it from solidifying correctly. so if you use honey, I wouldn’t use more than two Tablespoons, but you’re probably best if you can sweeten it with natural sweeteners instead. 🙂

    2. No problem! Let me know how peppermint tastes!! I bet using essential oils would be tasty and add to the immune boosting effect. I’d prob try lemon and orange or grapefruit.

  46. Hi! I tried these out, and the lemon separated from the coconut oil in the silicon molds. When I went to pop them out, the lemon juice had sunk to the bottom, and the coconut oil resolidified above it. 😦 Any thoughts?

    1. Hey there, I found that it looked like the lemon separated, but if you used honey (which I think was in the recipe?) that’s actually what does it. I figured that out by accidentally forgetting the honey, and they solidified perfectly. If you can see for sure it was the lemon and not honey, did you blend it in the blender well? If so, my other thought is perhaps you added too much lemon juice/zest. Perhaps try again with a little less? Or, melt back what you have, add more coconut oil (pre-melted), sweeten it up a little more, add to the molds again and see if that fixes it. I have done it a few times now and haven’t noticed any problem with the lemon or lime or mango I’ve used, but honey has messed mine up, hence my thoughts on the honey. Let me know if that fixes it!

      1. Hi! Thanks for the reply. I actually used agave instead of honey, maybe that was the problem? My lemon was also really juicy, so that may have added to the issue. I’ll try it again with just honey and let you know!

      2. Great! Also, I did this recipe recently with lime and mango. It’s better than the lemon, I think! I used about 1/4 cup mango chunks (fresh), and juice and zest from ONE lime, use only 2 tbsp honey and use natural sweetener to taste (like nectresse, stevia,ideal, etc) and they were fabulous!

      3. Hey! I think my vote after a number of experiments is to ditch the honey. I think also if the oil gets all melted it doesn’t stay thick enough to keep the fruit evenly spread, so it sinks and separates. So try to melt oil as minimally as possible.

    2. mine are in the molds right now, and I am SURE the same will happen to me. 😦 Did you find a solution?

      1. The solution that seemed to work best for me was use minimal honey, don’t melt all the oil you need it to have some substance to keep the zest and honey from sinking/separating to the bottom, and I wouldn’t do too many lemons. The more liquids you add the harder it will be for the oil to solidify.
